Ina Garten Skillet Brownies

Ina Garten Skillet Brownies are a quick, make ahead dessert from The Standard Grill in New York City. She tasted warm brownies in individual skillets there and brought the idea home. No cooling or cutting, just fudgy brownies with ice cream for your next dinner party.

Instant coffee in the batter is what deepens the chocolate flavor without making the brownies taste like coffee at all. Pull them at exactly 22 minutes, because even a few extra minutes will turn the fudgy center dry.

Course: DessertCuisine: AmericanDifficulty: Easy

Rich, fudgy brownies baked in individual cast-iron skillets with two kinds of chocolate and a hint of coffee. Serve them warm with vanilla ice cream.

Ingredients

Directions

  • Preheat the oven. Set the oven to 350 degrees. Butter and flour four individual cast-iron skillets.
  • Melt the chocolate. Place the butter, 4 ounces of chocolate chips, and the unsweetened chocolate in a medium bowl set over simmering water. Stir until just melted and set aside to cool for 15 minutes.
  • Add the dry ingredients. In a large bowl, stir together the eggs, coffee powder, vanilla, and sugar. Add the cooled chocolate mixture and stir to combine. In a small bowl, sift together 1/4 cup of flour, the baking powder, and salt, then add to the chocolate batter. Stir in the remaining 1/2 cup of chocolate chips and toss them first with the remaining tablespoon of flour.
  • Bake and serve. Divide the batter among the prepared skillets. Bake for exactly 22 minutes. The tops will be cracked and the insides will still be very underdone. Allow to cool for 15 minutes, then serve warm topped with a scoop of vanilla ice cream.

Can I make the brownie batter ahead of time?

Yes. Ina says you can make the batter up to 3 days ahead, store it covered in the fridge, then scoop it into skillets and bake when you are ready to serve.

What size skillets do I need for this recipe?

Use individual cast-iron skillets that measure about 5 inches across the top, 3.5 inches across the bottom, and 1 inch deep. Lodge and similar brands sell them in sets.

Can I bake these in a regular pan instead of skillets?

You can use an 8-inch square baking pan. Pour the batter in, bake at 350 degrees for about 30 minutes, and let it cool before cutting into squares.

How do I store leftover skillet brownies?

Cover the skillets with plastic wrap and keep them at room temperature for up to 2 days. Reheat in a 350-degree oven for 5 minutes to bring back the warm, fudgy center.

Can I use a different chocolate instead of Hershey's chips?

Any good semisweet chocolate chips or chopped semisweet bar chocolate will work. The unsweetened chocolate stays the same since it provides the deep, bitter backbone.
