Ina Garten Tuscan Turkey Roulade

Ina Garten Tuscan turkey roulade is a juicy, golden-skinned turkey breast rolled around prosciutto, fennel seed, sage and rosemary that comes together in 2 hours 30 minutes. Save this easy turkey dinner for Thanksgiving, dinner party nights or holiday gatherings, because it's a make-ahead roast that slices beautifully.

Tie the roulade tightly with twine every 2 inches, because that is what keeps the roll compact and the turkey cooking evenly. Skip the twine and the filling slides out while the thick and thin parts finish at different times.

Ina Garten says turkey deserves a spot on the table beyond Thanksgiving, and she built this roast to prove it. She likes to assemble it ahead, since the prosciutto, fennel and herbs have time to flavor the meat all the way through.

A butterflied turkey breast is spread with herby onions, grated butter and prosciutto, then rolled and tied into a tight cylinder. It roasts over wine until the skin turns golden and the slices stay moist.

Ingredients

  • Good olive oil

  • 1 1/2 cups chopped yellow onion (1 large)

  • 3/4 teaspoon whole fennel seeds

  • 2 tablespoons minced garlic (6 cloves)

  • 1 tablespoon chopped fresh sage leaves, plus 4 whole sage leaves

  • 1 tablespoon minced fresh rosemary leaves

  • 1 whole butterflied boneless turkey breast with the skin on (5 to 6 pounds) (see note)

  • Kosher salt and freshly ground black pepper

  • 4 tablespoons (1/2 stick) cold unsalted butter

  • 4 ounces thinly sliced Italian prosciutto

  • 1 cup dry white wine, such as Chablis

Directions

  • Preheat the oven: Preheat the oven to 350°F. That way it is fully hot by the time the roulade is rolled and tied.
  • Cook the filling: Heat 2 tablespoons olive oil in a 10 to 11-inch sauté pan over medium heat, then add 1 1/2 cups chopped onion and 3/4 teaspoon fennel seeds. Cook for 6 to 8 minutes until the onion is tender, then stir in 2 tablespoons garlic for 1 minute.
  • Add the herbs: Take the pan off the heat and stir in 1 tablespoon chopped sage and 1 tablespoon minced rosemary. Then set it aside to cool, so the warm filling doesn't start melting the butter.
  • Season the turkey: Open the butterflied turkey breast skin side down on a cutting board. Sprinkle the meat with 4 teaspoons salt and 1 1/2 teaspoons pepper.
  • Fill the turkey: Spread the cooled onion mixture evenly over the meat, then grate the 4 tablespoons cold butter on top with a box grater. Cover everything with the 4 ounces of prosciutto so the filling is totally hidden.
  • Roll and tie: Starting at one long end, roll the turkey up jelly-roll style into a compact cylinder, finishing seam side down. Tie it tightly with kitchen twine at 2 to 2 1/2-inch intervals, then slip the 4 whole sage leaves under the twine down the center.
  • Prep for roasting: Set the roulade seam side down in a roasting pan and pat the skin dry with paper towels. Brush the skin with 2 tablespoons olive oil and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Add the wine: Pour 1 cup white wine and 1 cup water into the pan, around the turkey and not over it. That keeps the skin dry so it can crisp.
  • Roast the turkey: Roast for 1 1/2 to 1 3/4 hours, until the skin is golden brown and the internal temperature reaches 150°F. Then take it out and cover it with foil.
  • Rest and slice: Let the roulade rest under the foil for 15 minutes, then remove the string. Slice it crosswise into 1/2-inch-thick slices and serve warm with the pan juices.

FAQs

What is a whole butterflied turkey breast?

It is both breasts from one turkey, still joined by the skin, opened flat like a book. Ask your butcher to butterfly and debone it, so it is ready to fill and roll.

Can I make the turkey roulade ahead of time?

Yes, and the flavor improves for it. Fill, roll and tie the roulade, then refrigerate it so the prosciutto, fennel, garlic and herbs soak into the meat before roasting.

How do I know when the roulade is done?

Use an instant-read thermometer in the thickest part. Pull it at 150°F, then let it rest under foil for 15 minutes so the juices settle and the slices stay moist.

Why do I grate the butter instead of slicing it?

Grating it on a box grater, like carrots, spreads it in tiny pieces across the filling. That way it melts evenly and bastes the meat from the inside as it roasts.

What is the most common mistake with this recipe?

Tying it too loosely is the big one, because the roll then loosens and cooks unevenly. Tie at 2 to 2 1/2-inch intervals and pat the skin dry so it browns well.
