Ina Garten Lobster Potpie

Ina Garten lobster potpie turns sweet lobster, fennel and a creamy Pernod sauce into a golden double-crust dinner pie in 2 hours 25 minutes. This make-ahead seafood pot pie fits Sunday dinner, holiday gatherings, Christmas Eve and cozy date night, and it freezes beautifully.

Chill the dough for the full 30 minutes before you roll it, because cold lard and butter are what make the crust flaky. Skip the rest and the dough turns tough and shrinks in the oven.

Ina Garten came up with this after a friend suggested swapping the chicken in a classic potpie for lobster, and she went straight home to test it. She likes that it freezes for months, so you can defrost one and bake it before guests arrive.

A buttery double crust of lard and butter holds a velvety fennel and lobster filling with peas and small onions. Once it bakes, the top turns deep golden while the sauce bubbles up through the slashes.

Ingredients

  • 1 1/2 cups chopped yellow onion (1 large onion)

  • 3/4 cup chopped fennel (1 fennel bulb)

  • 1/4 pound unsalted butter

  • 1/2 cup all-purpose flour

  • 2 1/2 cups fish stock or clam juice

  • 1 tablespoon Pernod

  • 1 1/2 teaspoons kosher salt

  • 3/4 teaspoon freshly ground black pepper

  • 3 tablespoons heavy cream

  • 3/4 pound cooked fresh lobster meat

  • 1 1/2 cups frozen peas (not “baby” peas)

  • 1 1/2 cups frozen small whole onions

  • 1/2 cup minced flat-leaf parsley

  • PASTRY:
  • 3 cups all-purpose flour

  • 1 1/2 teaspoons salt

  • 1 teaspoon baking powder

  • 8 tablespoons cold fresh lard, diced (1/4 pound)

  • 8 tablespoons cold unsalted butter, diced

  • 1/2 to 2/3 cup ice water

  • 1 egg, beaten with 1 tablespoon water or heavy cream, for egg wash

Directions

  • Cook the sauce base: Sauté 1 1/2 cups chopped onion and 3/4 cup chopped fennel with 1/4 pound butter on medium heat until the onions turn translucent, 10 to 15 minutes. Then stir in 1/2 cup flour and cook on low for 3 minutes.
  • Finish the sauce: Slowly add 2 1/2 cups fish stock, 1 tablespoon Pernod, 1 1/2 teaspoons salt and 3/4 teaspoon pepper, then simmer for 5 minutes. Stir in 3 tablespoons heavy cream once it thickens.
  • Mix the filling: Cut 3/4 pound cooked lobster into medium cubes and put them in a bowl. Add 1 1/2 cups frozen peas, 1 1/2 cups frozen small onions and 1/2 cup parsley, then pour the sauce over everything and check the seasoning, since the vegetables need no defrosting.
  • Make the dough: Pulse 3 cups flour, 1 1/2 teaspoons salt and 1 teaspoon baking powder in a food processor, then add 8 tablespoons diced cold lard and 8 tablespoons diced cold butter. Pulse 10 times until the fat is pea-sized. Then add 1/2 to 2/3 cup ice water with the motor running, just until the dough comes together.
  • Rest the dough: Knead the dough quickly into a ball on a floured surface and wrap it in plastic. Refrigerate it for 30 minutes so the fat stays cold.
  • Heat the oven: Preheat the oven to 375 degrees while the dough rests. That way it is ready the moment the pie is assembled.
  • Assemble the pie: Divide the dough in half and roll each piece to fit a 9 or 9 1/2-inch round, 2-inch-high baking dish. Fit one crust in the dish, add the lobster filling, then top with the second crust and crimp the edges together.
  • Bake until golden: Brush the top with 1 beaten egg mixed with 1 tablespoon water or cream, then cut 4 or 5 slashes in the crust. Bake for 1 hour 15 minutes, until the top is golden brown and the filling bubbles hot.

FAQs

Can I make this with shrimp or other seafood?

Yes, swap an equal amount of shrimp or mixed seafood for the lobster. Keep the pieces about the same size so everything cooks through in the same bake time.

Can I make lobster potpie ahead of time?

You can assemble it, refrigerate it, and bake it right before dinner. It also freezes for months, so you can defrost one and bake it a few hours before guests come.

Where do I find fish stock for the sauce?

Your fish market probably sells fresh fish stock, which gives the best flavor. Bottled clam juice works as a stand-in if you cannot find it.

Do I need to defrost the peas and onions first?

No, they go into the filling straight from the freezer. They finish cooking during the long bake, so they stay tender instead of turning mushy.

What is the most common mistake with this pie?

Using warm dough is the usual problem, because the fat melts and the crust turns tough. Chill the dough for the full 30 minutes and roll it quickly.
