Ina Garten fish and lobster cakes turn flaky cod, sweet lobster meat and fresh dill into crispy panko-crusted seafood cakes in 1 hour 25 minutes. This make-ahead seafood dinner fits a weeknight dinner, a dinner party and a special Sunday supper, with a creamy rémoulade on the side.
Let the poached cod sit in the pan for 10 minutes before you flake it, because the fish finishes cooking gently in its own cream. Flake it too soon and the mixture turns watery, so the cakes slump in the pan instead of holding their shape.
Ina Garten built these as a less expected cousin of crab cakes, pairing creamy cod with dill, lemon and mustard instead of crab. Then she folds in chunks of sweet lobster, and the book suggests asking the seafood shop to cook the lobster for you.

kcalPoached cod and diced lobster are bound with panko, mustard and dill, then pan-fried until deeply golden. The crisp crust gives way to a soft, creamy center that the tangy rémoulade cuts through.
Ingredients
8 tablespoons (1 stick) unsalted butter, divided
1 1/2 cups (1/4- to 1/2-inch-diced) yellow onion
1 cup (1/4- to 1/2-inch-diced) celery
1 large Holland red bell pepper, cored, seeded, and 1/4- to 1/2-inch-diced
1 1/4 pounds boneless, skinless cod fillets, cut into 4 pieces
1/2 cup heavy cream
Kosher salt and freshly ground black pepper
4 cups panko (Japanese bread flakes), divided
3 tablespoons minced fresh dill
2 tablespoons good mayonnaise, such as Hellmann's
1 tablespoon Dijon mustard
1 teaspoon grated lemon zest
2 extra-large eggs, lightly beaten
1/2 pound cooked lobster meat, 1/2-inch-diced
Rémoulade Sauce
- RÉMOULADE SAUCE:
1 1/2 cups good mayonnaise, such as Hellmann's
6 tablespoons minced cornichons
1 tablespoon whole-grain mustard
3 tablespoons Champagne or white wine vinegar
Kosher salt and freshly ground black pepper
Directions
- Preheat the oven: Preheat the oven to 200 degrees. That way it is ready to keep the cooked cakes warm while you fry the rest.
- Cook the vegetables: Heat 3 tablespoons of the butter in a large 12-inch sauté pan over medium-high heat. Then add 1 1/2 cups diced onion, 1 cup diced celery and the diced red bell pepper, and cook over medium heat for 8 to 10 minutes, stirring occasionally, until tender.
- Poach the cod: Lay the 1 1/4 pounds of cod on top of the vegetables and add 1/2 cup heavy cream, 1 teaspoon salt and 1/2 teaspoon black pepper. Bring to a boil, lower the heat, cover and simmer for 6 to 12 minutes, depending on the thickness, until the fish is just cooked.
- Rest and flake: Set the pan aside for 10 minutes so the fish finishes gently in the cream. Then flake the cod in large pieces with a fork.
- Mix the cake batter: Put 2 cups of the panko in a large bowl and add the cod mixture with its cooking liquid. Then stir in 3 tablespoons dill, 2 tablespoons mayonnaise, 1 tablespoon Dijon mustard, 1 teaspoon lemon zest, 2 beaten eggs, 1/2 pound diced lobster, 2 teaspoons salt and 1 teaspoon black pepper, mixing gently so the lobster chunks stay intact.
- Shape and coat: Use a 2 1/4-inch ice cream scoop to shape the mixture into 14 cakes, each about 3 inches wide. Then coat them all over in the remaining 2 cups of panko on a plate, patting so the crumbs stick.
- Fry the cakes: Wipe the sauté pan clean, then heat 2 tablespoons butter and 2 tablespoons olive oil over medium heat. Cook 5 cakes for 5 minutes on each side until nicely browned. Then move them to a sheet pan in the oven for up to 15 minutes while you repeat with more butter and oil.
- Make the rémoulade: Pulse 1 1/2 cups mayonnaise, 6 tablespoons minced cornichons, 1 tablespoon whole-grain mustard, 3 tablespoons Champagne vinegar, 1 1/2 teaspoons salt and 3/4 teaspoon pepper in a food processor. Stop when the cornichons are finely chopped, not pureed, then chill the sauce in a sealed container until you serve the hot cakes.

FAQs
Can I make the fish and lobster cakes ahead of time?
Yes, shape the cakes and set them on a parchment-lined sheet pan, then wrap well and refrigerate for a few hours. Sauté them just before serving so the crust stays crisp.
How do I get cooked lobster meat for this recipe?
The easiest way is to ask your seafood shop to cook the lobster for you. If you cook it yourself, two 1 1/2-pound lobsters give you about 1/2 pound of cooked meat.
How long does the rémoulade sauce keep?
The sauce can be made ahead and kept in a sealed container in the fridge for up to 5 days. Making it early also lets the cornichon and mustard flavors blend.
Can I use a different fish instead of cod?
Any mild, flaky white fish like haddock or pollock should poach the same way, since you only need it just cooked and easy to flake. Avoid oily fish, because it would overpower the sweet lobster.
Why are my fish cakes falling apart in the pan?
The usual cause is flaking the cod too soon or skipping the panko in the mixture, which leaves it too wet to bind. Let the fish rest for 10 minutes, mix gently and press the crumb coating on firmly.
