Ina Garten French chicken pot pies take about 2 hours 15 minutes and roasted chicken, leeks, tarragon and puff pastry to make a creamy, flaky individual dinner. Try this make ahead dinner party recipe for a cozy weeknight dinner or Sunday supper, since you can assemble the bowls a day early.
Chill the assembled pies for at least 30 minutes before baking, because cold pastry puffs up and turns golden instead of melting into the filling. Skip it and the crust slumps and bakes up pale and greasy.
Ina Garten treats this as a twist on the classic American pot pie, dressed up for company with French ingredients like leeks and tarragon. She also tops the bowls with store-bought puff pastry, so the crust is easy and the whole dish feels special without extra work.

kcalA creamy leek, carrot and mushroom filling with roasted chicken sits under a lid of golden puff pastry in each bowl. Once baked, the crust turns crisp and flaky while the sherry-spiked sauce bubbles underneath.
Ingredients
4 split (2 whole) chicken breasts, bone-in and skin-on (2 1/2 pounds)
Kosher salt and freshly ground black pepper
6 tablespoons (3/4 stick) unsalted butter
4 cups chopped leeks, white and light green parts (4 leeks)
2 cups (1/2-inch-diced) carrots (5 carrots)
4 teaspoons minced garlic (4 cloves)
8 ounces cremini mushrooms, stems discarded; sliced
1/4 cup minced fresh tarragon leaves
1/3 cup all-purpose flour
2 1/2 cups good chicken stock, preferably homemade
6 tablespoons cream sherry
1/2 cup heavy cream
1 (10-ounce) package frozen peas, such as Birds Eye Garden Peas
3 sheets frozen puff pastry, such as Pepperidge Farm (2 boxes), defrosted
1 extra-large egg beaten with 1 tablespoon water, for egg wash
Directions
- Preheat the oven: Preheat the oven to 350°F. That way it is ready when the chicken is seasoned and on the pan.
- Roast the chicken: Pat the 4 split chicken breasts dry, place them on a sheet pan, brush with olive oil and sprinkle with salt and pepper. Roast for 35 minutes until cooked through, then let them cool before discarding the skin and bones.
- Dice the chicken: Cut the cooled meat into 3/4-inch dice. You should end up with about 5 cups of chicken.
- Soften the vegetables: Heat 6 tablespoons butter in a Dutch oven and add 4 cups chopped leeks and 2 cups diced carrots. Sauté over medium-high heat for 8 to 10 minutes, until they begin to soften.
- Add aromatics: Stir in 4 teaspoons minced garlic, 8 ounces sliced cremini mushrooms and 1/4 cup minced tarragon. Cook for 5 minutes so the mushrooms release their juices.
- Make the sauce: Sprinkle on 1/3 cup flour and cook for 30 seconds, stirring constantly. Then add 2 1/2 cups chicken stock and 6 tablespoons cream sherry, bring to a boil and simmer for 2 minutes until slightly thickened.
- Finish the filling: Pour in 1/2 cup heavy cream, 2 teaspoons salt and 1 teaspoon pepper and simmer for 5 minutes. Stir in the frozen peas and chicken, taste for seasoning, then divide the filling among six 2-cup ovenproof bowls.
- Raise the heat: Raise the oven to 400°F while you prepare the pastry. It needs the hotter oven to puff and brown properly.
- Cut the pastry: On a lightly floured board, roll each of the 3 puff pastry sheets into an 11-inch square. Cut 2 circles from each sheet, each 1/2 inch larger than the rim of a bowl.
- Top the pies: Brush the outer edges of the bowls with egg wash and press a pastry circle over each one. Brush the pastry with more egg wash, sprinkle with fleur de sel and pepper, then cut three 1-inch slits in each top for steam.
- Chill and bake: Refrigerate the pies for at least 30 minutes, then set them on a parchment-lined sheet pan. Bake for 30 to 40 minutes, until the crust is golden brown and the filling is bubbly, and serve hot.

FAQs
Can I make these chicken pot pies ahead of time?
Yes, assemble them completely, cover tightly and refrigerate for up to a day. Then bake them straight from the fridge, which makes them a stress-free option for company.
Can I freeze French chicken pot pies?
You can freeze the fully assembled pies for up to a month. Defrost them overnight in the refrigerator before baking, so the filling heats through and the pastry stays crisp.
What can I use instead of cream sherry?
A dry white wine or extra chicken stock works if you don't have sherry. You will lose a bit of the sweet, nutty depth, so add a small pinch of salt to balance it.
Do I need individual ovenproof bowls?
Six 2-cup ovenproof bowls give you the classic look, but a large baking dish also works. Cover it with one sheet of pastry and bake until the top is golden and the filling bubbles.
Why do I brush the bowls with egg wash?
The egg wash acts like glue, so the pastry sticks to the rim of each bowl instead of sliding off. It also gives the crust a lovely browned, glossy finish.
