Ina Garten Cheesy Chicken Enchiladas

Ina Garten cheesy chicken enchiladas are an easy Tex-Mex dinner made with roasted chicken, black beans and a smoky chipotle tomato sauce, ready in 2 hours 15 minutes. They make an easy family dinner for Sunday supper, a summer cookout or a busy weeknight, and they're make-ahead friendly.

Simmer the enchilada sauce for the full 20 minutes, because that is when the flour, chipotle and tomatoes turn into one rich, thick sauce. Rush it and the enchiladas bake up thin and watery instead of bubbly and cheesy.

Ina Garten wanted a real comfort food version of enchiladas, so she roasts bone-in chicken and makes the sauce from scratch with fire-roasted tomatoes. Crumbling goat cheese into every roll before the sharp white Cheddar goes on top gives each bite a tangy, creamy middle.

Tender shredded chicken, black beans and poblano peppers are rolled in flour tortillas and baked under a smoky red sauce. The goat cheese melts into the filling while the Cheddar turns golden and bubbly on top.

Ingredients

  • 2 pounds chicken breasts, bone-in, skin-on (3 split)

  • Good olive oil

  • Kosher salt and freshly ground black pepper

  • 2 tablespoons canola oil

  • 2 tablespoons all-purpose flour

  • 1 tablespoon chili powder

  • 1 tablespoon ground chipotle powder

  • 1 teaspoon ground cumin

  • 2 cups good chicken stock, preferably homemade (this page)

  • 1 (14.5-ounce) can fire-roasted diced tomatoes

  • 1 1/2 cups crushed tomatoes, such as San Marzano

  • 1 teaspoon dried oregano, crushed in your hands

  • 1 1/2 cups chopped yellow onion (1 large)

  • 1/2 cup seeded and small-diced poblano pepper

  • 1 (15.5-ounce) can black beans, rinsed and drained

  • 1/4 cup minced fresh parsley or cilantro, plus extra for garnish

  • 7 (8-inch) flour tortillas

  • 7 ounces creamy goat cheese, such as Montrachet

  • 2 cups freshly grated extra-sharp white Cheddar (6 ounces)

  • Sour cream, for serving

  • 2 ripe Hass avocados, pitted, peeled, and sliced, for serving

Directions

  • Preheat the oven: Preheat the oven to 350°F. That way it is ready when the chicken goes in.
  • Roast the chicken: Place 2 pounds bone-in, skin-on chicken breasts on a sheet pan skin side up, rub with olive oil and sprinkle with salt and pepper. Roast for 30 to 40 minutes until a thermometer reads 140°F, then cover with foil and rest 15 minutes.
  • Shred the chicken: Discard the skin and bones once the chicken is cool enough to handle. Then shred the meat into bite-size pieces.
  • Start the sauce: Heat 2 tablespoons canola oil in a large saucepan over medium heat and whisk in 2 tablespoons flour for 1 minute. Whisk in 1 tablespoon chili powder, 1 tablespoon chipotle powder and 1 teaspoon cumin, then add 2 cups chicken stock.
  • Simmer the sauce: Bring the stock to a boil, lower the heat and simmer a few minutes until slightly thickened. Then stir in the fire-roasted tomatoes, 1 1/2 cups crushed tomatoes, 1 teaspoon oregano and 1 tablespoon salt, and simmer 20 minutes, stirring now and then.
  • Cook the vegetables: Heat 2 tablespoons olive oil in a 10 to 11-inch sauté pan over medium-high heat. Sauté 1 1/2 cups chopped onion and 1/2 cup diced poblano for 5 to 7 minutes until tender.
  • Make the filling: Take the pan off the heat and stir in the shredded chicken, black beans, 1/4 cup minced parsley or cilantro, 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Set it aside while you get the dish ready.
  • Assemble the enchiladas: Spread 1 cup of sauce in a 9 x 13-inch baking dish. Spread each of the 7 tortillas with 3 tablespoons sauce, then add 3/4 cup filling and 1 ounce crumbled goat cheese. Roll tightly and set seam side down in the dish.
  • Top with cheese: Fit the enchiladas snugly side by side. Then spread the remaining sauce on top and sprinkle with 2 cups grated extra-sharp white Cheddar.
  • Bake and serve: Bake for 30 to 35 minutes until the cheese is melted and the sauce is bubbly. Sprinkle with parsley and serve hot with sour cream and sliced avocados.

FAQs

Can I make cheesy chicken enchiladas ahead of time?

Yes, Ina Garten says you can assemble the whole dish and refrigerate it for up to a day. When you're ready, bake it cold from the fridge at 350°F for 40 to 45 minutes until hot and bubbly.

Can I use leftover or rotisserie chicken instead of roasting it?

You can, and Ina Garten suggests leftover roast chicken in the recipe. Shred about 4 cups of cooked meat, which skips the 30 to 40 minute roast and the resting time.

What can I use instead of goat cheese?

Cream cheese is the closest swap, since it is just as soft and a little tangy. Crumble or dollop about 1 ounce into each enchilada as you roll it.

How do I store and reheat leftover enchiladas?

Cover the baking dish or move portions to an airtight container, and keep them in the fridge for a few days. Reheat in a 350°F oven until hot, since the microwave can make the tortillas gummy.

What is the most common mistake with chicken enchiladas?

Under-cooking the sauce is the big one, because a thin sauce makes the tortillas soggy. Give it the full 20 minutes of simmering so it thickens before you assemble.
